Chef Michal Hájek

My specialty is preparing fish and fresh season ingredients. I do not like to be limited by conventions and I like to be creative in combining new flavours and to come up with original recipes that take full advantage of the potential of the selected ingredients. I grow my own herbs in the garden that I use for my cooking – I like to go to various shops and markets in this country and abroad and discover new interesting ingredients. In La Bouchée Restaurant I also create a tasting menu for the Wine of the Month. Our team chooses suitable ingredients for individual samples of wines and I test various recipes till the entire menu makes up a harmonic complex with the wine.

My motto is: every meal that I create is like a small gift for my guest.
